My mother-in-law's Charosis recipe, given to me over the phone a few days before the first seder Andy and I hosted (which was also, I think, only the second seder I'd ever attended):

"Well, first you take some chopped up apples, and then you add some chopped up nuts, and then you add a little wine and stir, and then you add some more apples, and then you add some more wine, and then maybe a few more apples, and then a little more wine --"

"And, uh, how much of each of these things do you add?" I interjected once I saw where it was going.

"Oh, you just do it 'til it's done," she said.

I put Andy in charge of the charosis. :)

You fold the nuts into the beaten egg yolks after the matzo meal and before the egg whites. I have very nearly the same recipe from my grandmother.

The optional items were given to me that way. I use honey in the charoses because I like it that way, and I don'use nuts in the sponge cake because I don't like it that way. That might also be why I didn't write down when to add them.

Also, I think it's time you knew that I don't use Manischewitz in the charoses, even though my grandmother did. I just use the sweetest Passover wine I have bought for the seder.
